AFRO - CARIBBEAN  COOKING

We will bring you the taste of the exotic cuisine from the smoke of the traditional West African barbecue to the heat and buzz of the Morrocan souke and across the Atlantic to the carnevals of Rio and Jamaica. You will enjoy the taste and delicacies that gave birth to modern Caribbean and Cajun cooking including: akara, a blend of black-eyed beans and authentic West African spices served with salsa salad and picante dip and glazed chicken in a Cajun and Creole marinade. You will also be introduced to plantains and Jamaican patties. Rounding off the meal will be St. Lucia banana cake, a hit with my wife and several friends and maybe a touch of the dramatic with tropical fruits flambéd in rum!

CUPCAKE AND CHEESECAKE EVENT

Brighten  up  those  dreary November days  with our colourful course. Pretty to look  at but lacking in taste? We will show you how to make a deliciously moist yoghurt based cake topped with vanilla sugar cream with details made from sweets using pastry cutters. You will also learn how to make rolled fondant. This versatile sweet can be coloured, flavoured and shaped to form many different styles of decoration.  Away from the oven and now to the fridge to „cook“ cheesecake. A butter and biscuit base, a thick layer of creamy cheese and contrasting sweeter fruit topping. Can you wait for the cakes to set before you eat them? This is my wife´s favourite course and she can offer dieting advice afterwards. Don´t forget to bring elasticated trousers!

AUTUMNAL  COLOUR  WARMERS

November when the trees change their leaves to the beautiful colours of autumn inspired us with these recipes. With Halloween still in mind and the weather getting colder my wife suggested golden pumpkin soup - this is good introduction to the complimentary tastes of crisp roasted pork with succulent apple sauce, earthy roast potatoes and sweetness of roast parsnips and carrots. The sweet courses are treacle tart, using the same shortcrust pastry as taught in our September courses, British flap jacks made from oates, butter, brown sugar and golden syrup and a reminder perhaps of Africa with date crunchies.

CHRISTMAS FESTIVE  FUN

Oven too small for the traditional whole roast turkey? Then why not to try turkey breasts with black pudding? Black pudding is nothing to do with Christmas pudding but is a type of sausage. This will be served with my mother´s scalloped potatoes and pickled cabbage for a little „bite“ and, of course, chestnut stuffing. If you have enough room inside following the main meal, there is a dessert of  mince pies made from sweetened shortcrust pastry and washed down with Christmas Wassail Punch. Christmas cake or Twelfth Night Cake is the centrepiece of British Christmas tables. A rich mixture of fruits and spices, steeped in alcohol, with mazipan and icing decorations.

HAPPY NEW YEAR COURSE

I have been asked to present some recipes which are quick to make and easy to do but a little different from the usual spaghetti, cheese and ketchup. We start off with Chicken Saltimbocca with green beans – a favourite from Italy. It can be served with pasta or fresh bread. For dessert I suggest Lemon Curd and Yoghurt Fool (mix of fruit and cream). This will help you keep your New Year´s resolution to eat healthily (at least for a short time)!

A VALENTINE´S MESSAGE TO WARM YOUR HEART

Keep out the winter cold with chicken and mushroom in a sour cream pastry. This can be made with red wine to create a luxury but simple meal. I am sure you will absolutely love it. Dessert could be individual blueberry cheesecake pots and we might try British Flap Jacks or even Date Crunchies. Or if not at least to warm your stomach.

SUMMER COOKING

For May we start with a wonderful aromatic Curry. We will show you how to prepare your own curry spice mixtures. This is followed by Jamaican Ginger Cake. This very moist cake  uses two types of cane sugar. Then, there is Chocolate fudge pudding. A light sponge with a thick creamy chocolate sauce. And if that is not enough, we might try popular British Flap Jacks and Date Crunchies.

HOLIDAY COURSE

Thai chicken is the best choice for hopefully hot days. It may sound exotic but it is very popular during our events. Trifle – loved by children and adults alike, comes in alcoholic and non-alcoholic varieties. See our facebook page! To cool even the hottest days with a simple ice-cream float.
